We are starting our fifth month planning meals and I am realizing that our list of meal options is pretty short. We keep having the same things over and over. The family is starting to bore of my cooking ... I think that's why we starting eating out so much in the first place.
So, this week I am trying a few things that I know I can do, but we don't have very often. And I hope to spend some time looking for some new recipes to try.
Menu for this week:
- Monday -- BBQ Pulled-Pork Sandwiches, green salad
- Tuesday -- Grilled Chicken, roasted potatoes
- Wednesday -- French Dip, veggies
- Thursday -- Calzones, green salad
- Friday -- Cashew Chicken Stir Fry, rice
- Saturday -- Chicken Fajita
- Sunday -- Chicken & Rice Casserole

Baked Potatoes...they are a quick and easy meal! We enjoy ours with cheese, chili and Ranch dressing. Simple...but filling. :-)
If I make Shepherd's Pie (my version, I've got it on my blog under cooking) my oldest boy gets so excited, he jumps up and down. Seriously easiest thing to make and it takes me 30 min. When my husband was still in college, we ate tons of baked potatoes. Cheap and fast - in the crockpot for 3-4 hours makes it so easy. We also eat a lot of spaghetti. Nachos are good too - put ground beef on top with the cheese and onions and anything else you can think of. Same with homemade pizza. Once you get the dough made, it's easy, easy. We throw just about everything on a pizza crust and call it dinner. :)
Your menu always sounds so good. I think I need to come visit you and try out some of your meals. :)
