Menu Plan Monday


I feel like I need to kick my meal planning up a notch, but I'm not sure how to take the next step, or what that step should be. Any suggestions? How do you use meal planning to make your life simpler? Do you have prep days, or baking days?

It also feels like I have hit a wall with the kids. My son has always been a picky eater. It is getting better, but we are having weight issues with both the kids again (they just don't eat enough to maintain their growth curve).

I think our biggest problem is snacking ... I can't get them to snack without completely ruining their meals. Any ideas? What do you do for kid's snacks? What kind of eating schedule do your kids have?

Without further ado, here is our menu for the week. A lot of it is carry over from last week.

Menu for this week:
  • Monday -- going out for dinner with my hubby (no kids) =)
  • Tuesday -- Pasta Primavera
  • Thursday -- Chicken Curry
  • Friday -- Taco Bar
  • Saturday -- Baked Potato Bar

  • Sunday -- Leftovers

found you through MPM... and also am a full-time grad student (although currently without kids). way to go!

I don't have any suggestions about kids and snacking -- but one thing that has helped me save time in the kitchen is when I get back from shopping, I dice/chop/clean, etc., all the veggies/fruits that can be done ahead of time. This way they are accessible for snacks and ready to go at mealtimes!

Life goes so much more smoothly when I plan our meals ahead of time. As for prep - I don't have any answers, but I'm sure that dicing veggies (like mentioned above) and even having one day for baking would make things run easier.

I'm not much help with snacking either. (What a helpful commenter I am!) We don't really do snacks. Never have, either. There are some foods like bananas and apples that I tell the boys they can have anytime they want. Bananas especially go fast here. I buy a bunch maybe once a week and they're gone in a couple of days. They also love ants on a log - celery with peanut butter and raisins on top. I saw some eating utensils this weekend that I wondered if they might help Joshua. I'll email you about them. :)
